Watermelon Feta Salad Recipe

Looking for a healthy dish to bring to a barbecue or summer potluck? Try this healthy watermelon feta salad!

For me, summer is synonymous with two things: water and barbecues. Yet, whenever I head to an outdoor gathering, the healthier options are slim to none, and I find myself craving something cool and crunchy. To help me and my guests cope with the harsh summer temps, I love to serve an easy to throw together watermelon salad whenever I’m hosting a summer meal. This watermelon salad is a real crowd-pleaser and a great way to brighten and lighten up the spread. Enjoy this refreshing salad along with your hot dogs and hamburgers at your next barbecue!

Watermelon Feta Salad

Servings: 8

SALAD INGREDIENTS

1 bag mixed greens

2 large handfuls arugula

1 cup cubed seedless watermelon

¾ cup chopped cucumber

½ cup pistachio pieces

½ cup crumbled feta (sheep or cow’s milk)

DRESSING INGREDIENTS

¼ cup red wine vinegar

¼ cup avocado or olive oil

1 tbsp. honey

⅛ tsp. pink himalayan or sea salt

dash of black pepper

DIRECTIONS

  1. Toast pistachios in a toaster oven or skillet until lightly toasted and golden brown.
  2. Blend all dressing ingredients in an immersion blender or food processor.
  3. Combine mixed greens and arugula in a large salad bowl.
  4. Top with feta, cucumber, watermelon and toasted pistachios.
  5. Store in refrigerator and add dressing to taste once ready to serve.
  6. Mix salad and enjoy!
