Cinco de Mayo Snack: Mexican Baked Potato Recipe

Sarah McCune of Growing Up Sarita shares her recipe for baked potatoes a la Mexicana (aka papa asada), the perfect dish for an at-home Cinco de Mayo celebration

  • Russet potatoes
  • Oaxaca cheese
  • Favorite salsa
  • Chipotle crema (3 parts sour cream, 1 part chipotle adobo sauce)
  • Cotija cheese
  • 2-3 skirt steaks
  • Steak seasoning
  • Aluminum foil squares for each potato
  • Baking sheet


Wash and clean your potatoes. Place potatoes on the rack in the Instapot. Press “pressure cook” and manually adjust time to 10 minutes.

When potatoes are done, leave to rest a few minutes before releasing pressure valve. Tip: I like to get my steaks ready while I’m waiting.

Bring your steaks to room temperature and sprinkle with your favorite seasoning. A carne asada seasoning mix from the store will also do the trick! Cook your steaks on a cast iron. Depending on the thickness of your steaks, they should only take a few minutes on each side.

On a baking sheet, line up the aluminum foil and place your potatoes on top, one per square. Make an incision, creating an opening in the potato to fill it with the toppings, then push the ends of the potato together. Insert a piece of the oaxaca cheese inside the incision. Wrap the stuffed potatoes and place on baking sheet in the oven at 400 F for 10 minutes.

While the cheese melts in the oven, line up your toppings because it’s about to get good! Finely dice the skirt steaks and line up the sauces.

Pull your potatoes out of the oven and add a dollop of the chipotle crema to each one, then the diced steak, the salsa, and finally, the cotija cheese sprinkle. You can also add diced serrano and jalapeno peppers on top for a fresh, spicy crunch.

Finally, dig in and enjoy!
