Equinox Bloomfield Hills treated new members and guests to an exclusive culinary dining experience with renowned chef James Rigato at Mabel Gray. Attendees enjoyed an eight-course meal paired with wines, along with a demonstration by Rigato that featured the benefits and flavors of eating locally sourced and seasonal foods.
The Host: Equinox
Equinox is the luxury fitness brand that has made a name for itself nationally by reaching members who strive for a high-performance life. According to David Weiss, the general manager of Equinox Bloomfield Hills, these pillars “are synergistic, fluid and dynamic. We are experts in creating precise and individualized blueprints that build bodies primed for high-performance life.”
This seasonal culinary event allowed Weiss and his team to introduce members to an innovative, plant-forward menu that is aligned with the Equinox nutritional pillars. The eight-course menu featured locally sourced and seasonal ingredients, and Rigato talked to guests about his unique approach to cooking, sourcing ingredients from local partners and the unique flavors achieved working with seasonal items.

Mabel Gray has been named one of the areas best restaurants, and it is no surprise why. Chef James Rigato, the 2017 James Beard semi-finalist for best chef, creates a new, handwritten menu each day. He features the very best of what is fresh, seasonal and local. Everything is made from scratch with only the best ingredients he procures from like-minded food producers.
Chef and his team provide a sensory experience from the moment you walk in the door. The sounds and aroma from the open kitchen, along with the warm woods and lower lighting in the space, perfectly blend with the incredible flavors in each dish, giving guests a culinary experience they won’t forget. His team is welcoming and eager to take care of your every need from the moment you walk in the door.
To say this meal was incredible is an understatement. The primarily plant-based menu featured as many locally sourced ingredients as possible, like hibachi roasted Michigan carrots, beet Greek salad and Chaldean curry. My personal favorite was the caramelized quince with prosciutto, almond fried goat cheese from Idyll Farms in Northport, Michigan, and local honeycomb. The combination of sweet honey with crunchy almond, creamy goat cheese and the salty prosciutto are the perfect combination of flavors and textures.
The wine pairings by sommelier and service manager Lindsay Martinik were a perfect complement to the complex flavors in each dish. Overall, this was truly one of the best meals of my life.
1. King crab dumplings and dashi, garlic butter and chives.
2. Hibachi grilled Michigan carrots, carrot top green harissa, coconut milk and nutritional yeast.
3. Maitake, cashew miso mousse, house kraut, Italian black truffles and button mushrooms.
4. Crispy octopus, Michigan beet Greek salad and garlic yogurt.
5. Carmelized quince, prosciutto, almond fried Idyll Farms goat cheese, Michigan espelette and local honeycomb.
7. 60-day dry aged USDA prime New York strip, Chaldean curry, crispy sweet potato and pumpkin seed dukkah.
8. Dark chocolate pot de creme, butterscotch, sea salt and orange peel caramel corn.
